These chicken drumsticks with broccoli and cauliflower (dressed with delicious Alfredo sauce by Suzanne Ryan on page 68 in her Simply Keto book) makes for a tasty, filling main-meal!

and Alfredo Sauce
Ingredients

  • 2 chicken drumsticks (with skin)
  • 1/2 teaspoon olive oil
  • pinch of ground sage, ground rosemary, salt, pepper for marinating
  • broccoli (about 3 oz raw)
  • cauliflower (about 3 oz raw)
  • 1/4 cup Alfredo Sauce from Simply Keto

How To Make
Chicken Drumsticks With
Broccoli And Cauliflower
and Alfredo Sauce

  1. Marinate your chicken drumsticks in the olive oil and seasonings overnight in a Ziploc freezer-type bag
  2. Day after: Heat up your Cosori Air Fryer (see Cosori below) to 325°F and cook chicken to an internal temperature of 180°F (takes about 20 minutes)
  3. Prepare your Alfredo Sauce via Suzanne's book (5 min prep and 15 mins cook time) and keep your eye on it ~ don't let it boil ~ stir very often ...
  4. Steam your cauliflower and broccoli when the chicken is ready and resting in the Cosori. (My veg were purchased prepped and ready-to-cook in the microwave in its bag! (Hey, shortcuts are F-I-N-E). If you spent time prepping your veg, start the steaming about half way through chicken-cooking time
  5. Act like a magician and get everything on a plate at the same time(!!!) and dig in.

The Cosori Air Fryer

Here's the Cosori Air Fryer ... this model is the "smart" model with fancy push buttons and presets. My model isn't "smart", i.e. I chose the model "black with knob" over the digital model. Why? I just like having total control of my temperature AND timing ... plus it's less buttons to keep pushing and hear beeping!

The Cosori Air Fryer does a FANTASTIC job of cooking anything! If you're firing up the old grill - then use that ... but for less muss'n'fuss, the Cosori Air Fryer is fab.
